La ricetta: “Spaghetti alle Vongole”

100 gr di spaghetti (non sottili) | 200 gr di vongole | pomodorini ciliegine (facoltativi) | aglio | olio | prezzemolo

La semplicità di questo piatto è la difficoltà principale.

Innanzitutto, bisogna saper scegliere una qualità di spaghetti non troppo sottili, ma di un certo spessore che riesca ad assorbire il sapore del piatto.

Anche le vongole, vengono meticolosamente selezionate dai cochi nelle pescherie locali per assicurare la freschezza del prodotto.

Il primo passo è soffriggere aglio ed olio, e aggiungere un un pizzico di prezzemolo un attimo prima di accludere le vongole.

A seconda dei propri gusti, possono essere aggiunti i pomodorini “ciliegine”, piccoli pomodori dalla forma rotonda tipici di Praiano, che devono però semplicemente impreziosire il piatto senza alterarne il sapore.

Lo spaghetto, con cottura al dente, viene successivamente mantecato a fuoco alto. Ultimo tocco, un pizzico di prezzemolo rigorosamente crudo e finemente tritato all’interno del piatto.

Una volta in tavola, qualche granello di pepe nero o di peperoncino secco, che non alteri quindi la quantità di olio già presente all’interno del piatto, rende il piatto assolutamente insuperabile.

The simplicity of this dish is the main difficulty.

Firstly, one must know how to choose a quality of spaghetti not too thin, but of a certain thickness that fails to absorb the flavor of the dish.

While the clams are meticulously selected by the staff in the local fish shops to ensure product freshness.

The first step is to saute garlic and olive oil, and add the clams and a pinch of parsley soon as the mixture is creamy.

Depending on your taste, can be added to the tomatoes “cherry” tomatoes small round shape typical of Praiano, but they must simply embellish the dish without changing the flavor.

Spaghetti with al dente, is then whipped over high heat. The final touch, a pinch of parsley and chopped raw strictly inside of the pot.

Once on the table, a speck of dried chilli, which does not change then the amount of oil already in the pot, the pot makes absolutely unsurpassed.
